Keeping buttercream happy in Pampanga heat

Buttercream is a beautiful thing and a slightly dramatic one. It holds crisp piping and soft colours, and it will also start to relax the moment it is left somewhere warm. None of that is a problem if you know what it wants.

The short version

  • Keep it cool and out of the sun.
  • Keep the box flat.
  • Take it out of the fridge about twenty minutes before serving.

That is genuinely most of it. The rest is detail.

Why the fridge helps, and when it does not

Chilling firms the butter, so the piping holds its shape and the decorations stay put. If your celebration is more than two hours away, the fridge is the right place for your cake. Keep it in its box so it does not pick up the smell of last night's adobo, because it absolutely will.

What the fridge does not do is improve the taste. Cold buttercream is firm and a little waxy on the tongue. Twenty minutes on the counter before serving brings it back to soft and creamy, which is how it is meant to be eaten.

The car journey

A car parked in the sun gets hotter than the day outside, quickly. If you are collecting your cake, plan to drive home with it rather than running three more errands first. Set the box flat on a seat or on the floor, not on somebody's lap, and point the aircon vaguely in its direction if you can.

A cake that has softened is not ruined. Twenty minutes in the fridge usually brings the piping right back.

At the party

Bring it out when you are ready for it rather than displaying it on a table for two hours beforehand. Cakes photograph best in the first half hour anyway, so there is no reason to have it sitting out in the warm getting soft while everyone finishes eating.

Leftovers

Cover the cut face with cling film so it does not dry out, and keep it chilled. Buttercream cake is at its best on the day, still lovely the next, and by day three you are eating it out of obligation. Cupcakes keep a touch longer because the paper protects the sides.
